| The use of horseradish dates back 3,000 years and has been used as an aphrodisiac, a treatment for tuberculosis, a rub for low back pain, it can be used as an accompaniment for corned beef, chicken and seafood. Cocktail sauce, specialty mustards, and many other sauces, dips, spreads, relishes and dressings also may contain horseradish. | The bite and aroma of the horseradish root are almost absent until it is cut or ground. During this process, as the root cells are cut, volatile oils known as isothiocyanate are released.
